High Protein Buffalo chicken tater tots

THIS WAS INSANE ! Now this is a little higher on the fat side because this was a "freezer" meal as such -(we all have those days that we need just something quick) so I want to show you that yes lots of adaptations could be made to this (Use fresh potatoes instead of tater tots etc) but that its OKAY to have quick easy meals and you don't have to think you've ruined anything when you have a meal like this. 

So like all my recipes you need to adapt the amount to fit your calorie targets. for my portion here it was 807 calories and 54G of protein. You can easily make it less with less tater tots but bulking it out with more veg. This was a " I need to go shopping and the only veg I have in the fridge is a leek" type of dinner! So if you want to save calories on tater tots have this on a night where you can reduce the amount of time but you've got something to pack it out with so your still full but without adding loads of calories!

Super easy and quick, I put the tater tots in the oven to cook. While they were cooking I cut up chicken and leeks and fried them off in a pan. I then added some Eat lean spreadable cheese (I added 20g but again do it to your taste and calories) and then I mixed in some buffalo sauce - this again is to your taste! I then put the tater tots in a bowl, topped it with the chicken and leek mixture then I added 20G of Eatlean cheese and placed under the grill for 5 minutes!

You of course can use other cheese but just be aware the calories and macros wont be the same!
