This was so super easy and great for using up veg in the fridge! For the stock:
Chicken stock ( I use the stock pots as they are gluten free)
I then added garlic, Soy sauce, salt & pepper to the stock along with some hot water.
I fried all the stir fry veg in a pan and boiled some rice noodles (you can use whatever noodles you like). I then soft boiled an egg, put the veg, noodles and stock all in a bowl and then the eggs on top with some coriander!
My bowl came up to around 500 calories. This one is a hard one to give you calories for as there are so many different combinations - so take it as inspiration and make your own soul bowls! ❤️
